New Year's holidays are associated with sweets and gifts under the Christmas tree, and a festive table not only in children’s mind. Especially for a sweet tooth, we questioned the chef of avant-garde restaurant DK – Alexander kolesnik what confectionery trends today are the most popular, and what a sweet masterpiece to prepare for New Year's table effortlessly.


What are the most popular desserts today?

Macarony, macaroons, makarons – this dessert has a lot of names in Ukraine - (laughs Alexander). Today, this dessert  really deserved high popularity in Europe and Ukraine as well.


Why do you think it is so popular?

It's difficult to say for sure. Perhaps various colors, flavor variety - chocolate, almond, lemon, pistachio and many more can be listed. And, perhaps, convex "space" form.

 

What dessert can be called the New Year one?

You know the answer - it's ginger biscuits, which perfectly fit and are associated  with the New Year and Christmas holidays. Although we are used to call it - gingerbread.


Is it a complicated dessert? Could you share the recipe for housewives?

In my opinion, nothing could be easier. Write down the recipe!


And few questions that a lot of people are concerned about. Do you find it difficult to cope with the desire to eat your masterpiece.  How do you deal with this?

During the day so many things have to be degustated that there is no place for normal meal - jokes Alexander - But, frankly speaking, it is a matter of self-control, because in the restaurant of avant-garde cuisine you want to eat everything you cook. The appearance of each dish is a masterpiece or sculpture, and when you put your soul in every "work", it is very difficult to resist.


How many desserts you had to cook simultaneously?

DK - is one of the restaurants at Ramada Encore Kiev Hotel. There are a lot of conferences, banquets and corporate events – so very often we have to cook huge amount of desserts. Let me try to remember the greatest number ... 1500!


Yes, and as for Restaurant DK. Which dessert would you recommend to taste and whether Christmas tinges are there?

We have just released a new A La Carte menu and desserts as well. Of course we have Christmas theme in each dessert, but how it will look, our guests will be able to see during liquid nitrogen show. So, we are waiting for dessert.


Recipe of gingerbread:

250 g flour

1 tbsp. l. ground ginger

1 tbsp. l. cinnamon

½ st. l. clove

2 tbsp. l. liquid honey

250 g of brown sugar

Butter 200 g

2 eggs

1 hr. L. baking powder

Mix flour with baking powder and spices.

Mix the eggs with butter, honey and sugar into the egg mass add flour and spices.

Roll out the layer from the dough and cut using cookie tins.

Baking sheet covered with parchment paper, grease it with oil.

Powder cookies with sugar and send to preheated oven (180 degrees) for 30 minutes.
